Made from seed-grown native (zairai) tea trees that account for only about 3% of tea in Japan. Naturally cultivated for decades, their deep roots draw minerals from the soil, resulting in a clean, gentle sweetness and clarity.
Pan-fired using a historic kamairi technique rooted in the Chūgoku Mountain region, refined by Tea Factory Gen to create a warm, roasted aroma with layered complexity reminiscent of oolong tea.
Lightly processed leaves retain their structure, preventing bitterness even with boiling water. Easy to brew and suitable for aging, allowing flavors and aromas to evolve beautifully over time.
Since its founding in 1972, TEA FACTORY GEN is a tea atelier based in the Sera Highlands of Hiroshima, Japan.
They honor nature and tradition, producing tea through a fully integrated process using no chemical fertilizers or pesticides.
How to Use
Use 2 g of tea per 100 ml of freshly boiled water. Steep in a teapot for 1 minute.
For the second infusion, steep in boiling water for 30 seconds.
For the third infusion, steep in boiling water for 3 minutes or longer.
Use 5 g of tea per 500 ml of water. Steep overnight in the refrigerator.
After cold brewing, the same leaves can be reused by pouring boiling water over them for an additional hot infusion.
More Info
Hiroshima Native (Zairai) Tea: "Native tea" is tea planted and grown from seeds, and is a valuable category that makes up only about 3% of all tea in circulation. These tea trees are 60–70 years old, with roots extending over 2 meters deep into mineral-rich soil.
Because they are grown without fertilizers or pesticides, they may lack the dense umami of gyokuro, but instead offer something more essential: natural sweetness, a clean and refreshing flavor, and the pure vitality of the land.
Hiroshima Zairai Kamairi-cha: This kamairi (pan-fired) green tea is made from native tea trees grown naturally in the Sera region of Hiroshima Prefecture, where tea plants have existed for generations.
In the Chūgoku Mountain area, tea has traditionally been produced by roasting the leaves in iron pans. Building on this heritage, Tea Factory Gen applies a modern interpretation of the classic kamairi method, creating a tea with a warm, roasted aroma and layered complexity reminiscent of oolong tea.
Thanks to natural cultivation, this tea offers a clean, transparent taste that gently settles into the body, highlighting the pure character of the tea leaves and their growing environment.
How It Differs from Typical Japanese Green Tea (Sencha): • The leaves are not heavily rolled, so the cell structure remains largely intact. As a result, the tea does not become overly bitter even when steeped in boiling water for an extended time.
• Can be brewed easily with freshly boiled water, making it approachable and forgiving.
• Suitable for aging. Over long-term storage, the flavor and aroma continue to evolve, offering a unique and rewarding drinking experience.
